Potato salad with seaweed

Summer is just around the corner and what is more associated with barbecues in the evening sun than our faithful old friend - the potato salad?

It has taken many forms over the years and this year is no exception. We would therefore like to offer you a recipe with our dried sugar kelp that will twist it up a notch. Keep in mind that dried seaweed is quite salty and can be used as a substitute for added salt, however, an extra pinch or two of salt may be needed anyway so be sure to taste. 

Potato salad with seaweed
  • 500g potatoes
  • 2 tbsp dried seaweed
  • 2 tablespoons capers
  • 1-2 shallots or spring onions
Seaweed dressing
  • ⅓ parts vinegar
  • ⅔ parts neutral oil
  • 1 tsp dijon
  • 3 tbsp dried seaweed
  • salt
  • honey
  • pepper

Do this:

Boil the potatoes, drain the water and leave to cool. Mix the remaining ingredients in a bowl and add the potatoes, then mix gently so that the potatoes do not mash.

Mix the vinegar by adding all the ingredients to a jar and shake well, seasoning with salt and pepper and honey to taste. Drizzle your dressing over the potato salad and serve!
