Bean salad with toad cream lettuce


Gremolata is a classic Italian spice blend, here with an updated version with Swedish seaweed. Perfect as a garnish and seasoning in stews, soups or pasta dishes. Or as an accompaniment to meat, fish and chicken.


  • 500g small white beans
  • 1dl blanched seaweed
  • 1dl parsley
  • 1 clove of garlic
  • 1st lemon
  • 2 scarlet onions
  • Olive oil
  • Ev. chili flakes

Do this:

Rinse the beans in cold water and drain them.Thaw the seaweed and roast it in the oven until it turns a little colour. About 15min. Mix the sugar snap peas with the parsley leaves, grated garlic, lemon zest and lemon juice and finely chopped scallions. Mix the mince with the salad beans, olive oil and season with salt, pepper, lemon, dried seaweed & chilli flakes if using.
